Simple Pico De Gallo!


This simple Pico De Gallo recipe goes great with tortiall chips, tacos and Sunday football! Be sure to add it to your salsa recipes file!

Every once in a while you need an easy snack or something to tame the gang. Salsa is a great choice and this is a quick and easy one.

Pico De Gallo

Throw together a batch of Pico, grab the chips, and watch the game. Easy Peasy!

This Pico De Gallo recipe is also a great addition to any Mexican fare. You can add it to tacos and other dishes to help pump up the flavor and the heat.

This recipe is great to enjoy immediately, but will get better and better sitting chilled in the fridge until tomorrow. The flavors blend, the onion mellows, and the heat builds. If you like heat, this is a great way to generate it!

Using a food processor is a quick and easy way to cut up veggies, but we enjoy just dicing the ingredients with a knife to keep the chuncks a little bigger. It just makes things a bit more dippable. Is that a word? Well, if it isn't, it should be.

Pico is a healthy dish, but make sure it's refrigerated to keep it that way. We've all heard horror stories about salsas and guacamoles, but just keep it properly refrigerated and you are good to go!

We will continue to add a few salsa recipes as we try them out. They seem to be a mainstay around our house, and like I say, they are great for get togethers.

Pico De Gallo!

Ingredients:

  • 1 large sweet onion
  • 4 large fresh tomatoes
  • 4 sprigs fresh cilantro
  • juice of 3 fresh limes
  • 1 jalapeno or serrano pepper
  • salt to taste

Preparation:

  • Dice all ingredients into small pieces.
  • Add lime juice and salt.
  • Place it in an air tight container.
  • Refrigerate for 3 to 4 hours. Overnight is best.
  • Serve cold
  • Enjoy

Adjusting the Heat:

Some of us enjoy a fair amount of heat with our salsas. Some people don't. Be sure to adjust the amount of jalapeno pepper you use. If your not a fan of heat at all, just leave it out. If you like a lot of heat, you may want to experiment with a Scotch Bonnet pepper. Just be careful, some peppers take their heat seriously!

Pairing:

Personally, I think cold beer and hot salsa are a match made in heaven. Ju on the other hand, prefers a tall glass of ice tea. I know, what's up with that!
