Mango Salsa!
Goes Great With Shrimp Tacos!

This mango salsa has been a big hit with our favorite seafood recipes. We whipped up a quick snack the other day and made some shrimp tacos. We added some salsa, and found another keeper! Like everything else, change the amounts to suit your taste. More mango and less green pepper makes the salsa sweeter to the taste. More onion and more green pepper, well, you know! This dish is also pleasant to look at. Beautiful colors makes this look good on any table. Try it with your family or friends!
Mango Salsa!Ingredients: - 2 ripe mangos
- 1/2 red onion
- 1/2 each yellow,red and green pepper
- 2 T. freshly squeezed lime juice
- 8 fresh mint leaves
Preparation: Dice the mango, onion and peppers into small cubes. Add the lime juice. When adding the mint leaves, start with 8 and chop them fine and add to the mix. Adjust the amount of mint to your taste. Some people like to add Jalapeno peppers for a little heat. You could also try Habenero or Scotch Bonnets. Experiment, make it your own and enjoy. Refrigerate for at least 2 hours so the flavors have a chance to blend. The longer the better. Wine Pairing: Choose a wine to pair your main course. Also goes excellent with Carona or Dos Equis!
