We have tried this recipe with a few of our favorite seafoods and it's excellent! Butter-flied shrimp, grouper, mahi, and scallops.
It seems to go well with either flaked fish or shell fish. I don't think you could go wrong with any fish plate.
We are going to try it with some cracked conch next. We'll let you know how it goes. Or, if you try it first, let us know!
Update:
We recently made of a batch of the salsa and had it with some BBQed chicken breasts. It was excellent! We like to keep things as simple as possible and this salsa is a simple recipe. The prep time is about 5 minutes. We made it up the day before we BBQed and let is chill overnight. Try it!
We've found it best to prepare it a day ahead of time and refrigerate to let the flavors blend, but if you can't wait, it's still real tasty!
We love to try various salsa recipes, and we really like this one. It's even kind of healthy but we don't let that bother us!
As with all recipes, change the amounts to suit your personal taste!

This salsa recipe is very similar to pico de gallo. For some variation, you can add cilantro, celery, and/or fresh lime juice. It's just a matter of personal tast!
Pairing:
A light white wine works well with the seafood and salsa. Also goes excellent with Carona, Dos Equis, Tecate, Presidente, Kalik, Bud, Coors, MGD, Red Stripe, Red Hook, Sam Adams Lager...!
