The Conch Salad is a Bahamian staple. Go just about anywhere in the Bahamas or South Florida and you will find it on the menu.
It's a robust recipe and explodes with flavor. It's a great choice for friends and family get togethers.
The conch in this recipe is actually cooked by the citrus acids that are added.
As with all recipes, experiment a little. Adjust the amounts to fit your taste!
Put conch between 2 sheets of heavy duty plastic wrap
Beat conch into submission (till it's about 1/4 to 1/2 in thick)
Dice conch into small 1/4 inch pieces
Add the rest of the ingredients and mix well
Cover and place in fridge for at lest three hours. Overnight is wonderful
Iced tea, ice cold Kalik (or beer of choice)!
